Lemon Myrtle Pancakes

Our cafe manager Jen has whipped some super easy and delicious Lemon Myrtle Pancakes and wanted to share the recipe with you!
We source our lemon myrtle from a wonderful local supplier www.bushtuckershop.com and they are doing online orders so you can do some Australian native-inspired cooking at home.
Lemon Myrtle Pancakes
Recipe: Serves 2-4
1 tbs Lemon Myrtle, ground
250ml milk of your choice
1 egg
1 cup self-raising flour
2 tbs sugar
Pinch of salt
Butter for cooking
Method:
1. Combine all ingredients into bowl, making sure to break down any lumps in mixture.
2. Cook on low-medium heat in frying pan. Add butter to pan as needed.
3. Serve with whipped cream and fruit or greek yogurt for a healthy option.
